Green Chile Stew

Nothing pairs better with cold weather like a warm stew. Add in some Green Chiles for extra flavor!


Ingredients:

  • 2-3 pounds small cubed pork chops (trim fat)

  • 3 large red potatoes - Cubed

  • 3 Cups roasted and chopped green chile

  • 1.5 quarts chicken broth

  • 1 whole onion - Diced

  • 3 Stalks of celery chopped

  • 3 Cups of chopped baby carrots

  • 1/2 teaspoon Cumin

  • 2 tablespoon Salt

  • 2 Sazon Goya Packets (optional)

  • 2 garlic cloves - Minced


Instructions:

Heat oil in the stew pot. Dust the diced pork in flour and brown in a hot stew pot. Once the pork is browned combine the chicken broth, onion, and the fire-roasted green chile and bring to a simmer add salt, garlic, and cumin. Simmer for about 30-60 minutes until pork is nice and tender. Once the pork is fully cooked and tender, add the diced potatoes and carrots and continue to simmer until the potatoes and carrots are soft. Once the stew is complete you can thicken the sauce, if needed, with 1/2 cup of flour mixed with some hot water.



Serve with warm tortillas & enjoy
