Green Chile Chicken Risotto

Looking for a comfort recipe that will have you going back for seconds? This green chile chicken risotto is a family favorite!


Ingredients:

• 2 ½ cups arborio rice

• 6 cups chicken stock

• 1 medium onion (finely diced)

• 2 cloves garlic chopped

• 1 cup white wine - We use Chardonnay

• 2 cups of Hatch green chile (diced)

• 2 cups of protein of choice - We use chicken, but this can be optional!

• Parmesan cheese to taste (1-2 cups)

• Salt and pepper to taste

• 2 tbsp. olive oil or butter



Directions:  

1. Heat pot over medium heat with olive oil/butter.

2. Saute onion until translucent (about 4-5 minutes).

3. Add in minced garlic until fragrant.

4. Pour Rice into the pot. Stir around until coated and evenly combined with onions and garlic. Toast rice for about 2-3 minutes.

5. Pour in the white wine and stir.

6. Once the wine is absorbed, ladle in about a cup of chicken stock. Stir every minute or so until the liquid is almost absorbed. Do not like it dry out!

7. Ladle in the next cup of stock and repeat until you have 1 cup left.

8. Ladle in your last cup of stock and add your chopped green chile and protein. Keep stirring until absorbed. The risotto should be really creamy and the rice, al dente.

9. Add in parmesan and then add salt and pepper to taste
